Hot Won Ton Bites

Well this past week I decided to finally venture into the won ton appetizer realm. I have to say it was a huge success! These little wrappers are so cute! I made two different ones and the were both a huge hit. The main recipe I used was spinach and artichoke. I got the recipe originally from Kraft Foods and tweaked it. It called for red peppers. Everyone knows I don’t like sweet peppers so I used sun-dried tomato as well. If you want the original “Warm Spinach & Artichoke Cups” click and check it out. The second one I made was a sausage/cream cheese combo. I had two large Italian style chicken sausages and just ground them up and added cream cheese. HUGE HUGE HIT!

The won ton wrappers can be found in pretty much every supermarket. Look in your produce section by the Asian foods. The ones I used are the small square ones. Have fun with these because you can put just about anything into them and bake them! Experiment and have fun! I know I’m getting another package next time I go shopping! And make sure you have at least 2-3 mini muffin tins for these. You can use one but it will take longer.

INGREDIENTS:

24 won ton wrappers

(Spinach & Artichoke)

1 can (14 oz.) artichoke hearts, drained, finely chopped

1 cup shredded mozzarella cheese

1 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry

1/3 cup light mayonnaise

1/3 cup light sour cream

1/3 cup grated parmesan cheese

¼ cup finely chopped sun-dried tomatoes

4 cloves garlic, minced (use less if it’s too much garlic for you!)

(Sausage)

2-3 large chicken sausage, Italian style, ground up (I used the food processor)

1 package (8 oz.) light cream cheese

DIRECTIONS:

1. Heat oven to 350º.  Place 1 won ton wrapper into each of 24 mini muffin cups sprayed with cooking spray. Make sure the edges of wrappers extend over the top of cup. Bake 5 minutes. Meanwhile combine the rest of the ingredients.

2. Once the 5 minutes is up remove from oven. Spoon the mixture into the cups.

3. Bake 12-15 minutes or until filling is heated through and edges of the cups are golden brown. They may need an extra minute or so depending on your oven. Just keep an eye on them. Enjoy!

Pumpkin Mac & Cheese

Today’s recipe I have Rachael Ray to thank for. I saw this recipe on her show just the other day and had to try it. I did change it a little bit from her recipe but not too drastic. If you want to check her original recipe go to her show site at Rachael Ray Show.

Just a warning also, this makes a huge amount of mac and cheese so make sure you have many hungry people to eat it! I’m sending leftovers with my husband to his office! I made this as a side dish to my Spicy Garlic Barbecued Ribs. It was a friend’s birthday and he loves the ribs so I had to make something else to go with it. I really wanted to make my Best Garlic Smashed Cauliflower, Ever! But alas he doesn’t really like cauliflower and I didn’t think I should try and trick him on his birthday.

This recipe came out really good. I had a huge serving and was stuffed! The fiber from the pumpkin and whole wheat pasta really fills you up! The house smelled so good while it was cooking also! I was trying to convince myself it really was fall outside so I needed “fall smells”. Florida Fall doesn’t really start till December so I had to improvise. I will also be eating this several more times for lunch this week! Oh well, I will have to suffer through!

"Before"

INGREDIENTS:

1 pound whole wheat or whole grain short-cut pasta. (I used rotelli)

4 tablespoons butter

3 slightly rounded tablespoons soy flour (Rachael uses regular flour)

1 cup amber beer

2 tablespoons agave nectar (Rachael uses honey or maple syrup)

2 cups half-and-half (Rachael uses whole milk)

½ teaspoon allspice (you can also use ground cloves)

1 teaspoon ground mustard

½-1 teaspoon cayenne pepper (my husband says I should use Sirracha)

Freshly grated nutmeg, to taste

salt and pepper to taste (I found it needed more salt)

1 can (14-15 ounce) pumpkin purée or 2 cups fresh pureed pumpkin (NOT PUMPKIN PIE MIX)

2½ cups shredded sharp yellow cheddar cheese

Paprika for sprinkling on top

"After"

DIRECTIONS:

  1. Bring a large pot of water to boil. Salt it and cook pasta to al dente. Drain and reserve. Preheat oven to broil.

  2. Melt the butter in a medium size saucepan over medium heat. Whisk in the flour and cook for 1 minute.

  3. Raise the heat a little and add the beer. Reduce until almost evaporated.

  4. Whisk in the agave nectar and half-and-half. Season with the allspice, mustard, cayenne and a little bit of freshly grated nutmeg. Add salt and pepper to taste.

  5. Thicken to coat a wooden spoon, just a couple more minutes. Taste to see if you need to adjust the seasonings.

  6. Whisk in the pumpkin and stir in about 2 cups of the grated cheese with a wooden spoon until melted.

  7. Add the sauce to the pasta in a large bowl. It’s easier to mix in a big bowl.

  8. Add to a casserole dish or individual ramekins. (I used a casserole dish). Dust with a little paprika.

  9. Broil to brown and bubbly! Serve!

Serves 4-6

Mary’s Famous Mexican Dip

Yes I know I have been quite negligent with my blog lately! I am so sorry everyone. I made a promise to myself this morning to do better and I will!


Today’s recipe I have tried to get for years! Everytime I visit my sister Michele in NJ for any type of party she always has this dip. Her mother-in-law Mary makes it and showed Michele and everyone falls in love with it! Even the kids! So on a recent trip there, Mary happened to be in attendance as well and the dip was on the menu. So with camera and notebook in hand I got it! FINALLY! It’s a type of layered dip that you serve on a platter. Serve it with tortilla chips. I would recommend using stronger chips as well because this dip has so many yummy things you don’t want to lose anything because of a broken chip! We’ve all been there, digging in to a great dip and snap! Broken chip. You try again. Snap again! Another broken chip. So find your best thicker/stronger chips for this recipe.  I am also playing with an idea to make this as an Italian dip as well. I’ll post that when I work it out! So for now, here’s everyone’s newest favorite party snack! Thanks Mary!! (Now I want to go and make some to snack on!)

Ingredients:

1 package (8 oz.) cream cheese (you can use light cream cheese if you wish)

1  jar (16oz.) of your favorite salsa

Shredded lettuce, about 2 cups

Shredded cheddar cheese, about 8 ounces

3-4 campari or plum tomatoes, chopped (Or you can use 1-2 large)

3-4 scallions, chopped (use whole scallion)

¼ cup jalapeño slices

1 small can sliced black olives (You can use green if you don’t like black)

So pretty!

Directions:

  1. On a large platter spread cream cheese to cover bottom.
  2. Spread salsa over the cream cheese.
  3. Add shredded lettuce on top of the salsa.
  4. Add the shredded cheddar evenly over the salsa.
  5. Top with the chopped tomatoes.
  6. Add scallions.
  7. Add jalapeño slices.
  8. Top with black olives.

Serve with sturdy chips!! Eat some before it disappears!

It's going fast!

Faux-Fried Mozzarella Sticks

I just found this recipe while going through my emails and thought it was a perfect addition to a holiday weekend.  A quick, easy snack that isn’t loaded with fat and calories. Who doesn’t love mozzarella sticks? I always say you can fry anything and it will taste good. But this recipe bakes the sticks and it still seems like it is fried. I think it’s because the panko bread crumbs make everything much crisper and tastier! Love panko bread crumbs in our house! (Yes, we should marry them!) I always have the part-skim mozzarella sticks in the house. They are a great quick snack and it won’t kill your appetite or diet. I will make up a batch soon and add my own picture to the page. But for now I thank Chef Meg at SparkPeople for the photo I have added here. Also if you have Italian flavored panko bread crumbs you can use them instead of the plain and herb seasoning. Saves a step.

INGREDIENTS:

4 light string cheese sticks

1 tablespoon flour

1 cup panko bread crumbs(Japanese bread crumbs)

½ cup egg substitute (or 2 egg whites)

1½ tablespoons Chef Meg’s Italian Herb Seasoning Blend

DIRECTIONS:

1. Preheat the oven to 375º F. Spray a baking sheet with nonstick cooking spray. Pour the flour onto a small plate.

2. Cut the cheese sticks in half. Roll each cheese stick in the flour.

3. Place breadcrumbs and Italian herb blend in a small container with a lid or zipper-top bag; set aside. Pour egg substitute into a shallow dish. Using one hand, roll the floured cheese sticks in the egg mixture. One at a time, using your other (dry) hand, transfer the cheese sticks to the bread crumb mixture and shake to coat. Using the dry hand, remove from the crumb mixture and place on the baking pan. Continue until all cheese sticks are breaded. Spritz each cheese stick with cooking spray. Bake for 10 minutes or until cheese is bubbly and melted.

If desired, dunk these cheese sticks in low-sodium tomato sauce (calories not included).

Makes 4 two-stick servings.

Pesto Chicken Pizza

I keep finding such yummy recipes on the back of the mozzarella cheese labels these days. Yummy and easy recipes!!  This pizza uses a pre-cooked pizza crust. Just use your favorite crust. I like using the Pillsbury thin pizza crusts. Just roll out and bake! So simple. Love that little doughboy! (giggle)

This recipe also has only 4 ingredients. Simple, fast and delicious. Chicken is a great protein when we want to be eating right. And who says pizza has to be a bad thing! Pizza is our friend! I’ve been making pizzas alot lately and this is my next one! I haven’t made it yet but it just sounds so good. The pesto it calls for is store-bought but if you feel like making it yourself go ahead.

INGREDIENTS:

12 ounces sliced, pre-cooked chicken breast

1- 12″ thin pre-baked pizza crust

¼ cup prepared pesto

4-8 ounces part-skim mozzarella cheese, sliced or shredded

DIRECTIONS:

1. Preheat oven to 450ºF. Spread the prepared pizza crust with the pesto. Sprinkle with chicken and top with mozzarella cheese.

2. Bake for 10 minutes or until cheese begins to brown.

Makes 4 servings

Veggies Au Gratin

Welcome back and welcome to 2011! A new year to begin new resolutions and start fresh. I already started my exercise resolution today. I didn’t go to the gym but I did walk for an hour which was about 3 miles. Don’t want my body to freak out all at once. Must ease into it…

Well today’s recipe is something I threw together last week. I was looking for something different as a side dish. I think we were having a pork tenderloin or something. I actually don’t remember. Anyway, I came up with this recipe and there was enough leftover to “reinvent” it again for another night. I think it was even better the second time around! The flavors melded together much better. It is actually lower in fat and calories if you can believe it! I used fat-free half-and-half, Light Laughing Cow cheese and low-fat mozzarella. Also the flour I used to thicken it was soy flour but you can also use whole wheat or regular. The butter I used was a butter substitute also. Saving calories all over the place!!! When I “reinvented” it the second time I added cooked orzo and some leftover green beans I found in the fridge. Added a little more half-and-half and just heated it all up! Voila! Two nights! (and actually there was still a little leftover for a 3rd night for us to have a little more!)

When I made this I didn’t measure so I am guessing on the measurements here. If you need to adjust it for yourself, please do! Enjoy!

INGREDIENTS:

1 (16 ounce) package frozen broccoli and cauliflower

1 cup fat-free half-and-half

½ stick (4 tbsp) butter substitute

1½ cup soy flour

2 wedges Light Laughing Cow cheese (any flavor you like)

1 cup grated parmesan/pecorino cheese

½ cup shredded part-skim mozzarella cheese

garlic powder

DAY 2 INGREDIENTS:

½ cup uncooked orzo (cook according to package directions)

any leftover veggies in fridge

fat-free half-and-half as needed

DIRECTIONS:

1. Cook the frozen broccoli/cauliflower in microwave on High for about 7 minutes. Drain and put into a small casserole dish. Sprinkle with garlic powder, mix and set aside.

2. Meanwhile in a medium sauce pot add butter and half-and-half and stir until butter is melted. Add the flour and continue cooking on medium-heat, stirring constantly until mixture thickens and there are no lumps in the flour, about 10-15 minutes.

3. Add the Laughing Cow cheese and stir until melted completely. If it’s chopped into small pieces it will melt faster. Add the grated cheese and mozzarella cheese and stir until melted.

4. Add cheese mixture to the vegetables in the casserole dish and mix well until all vegetables are covered.

5. Place in preheated 350º oven and bake until cheese is bubbly and browned. This should be about 30 minutes or so. Check after 30 minutes to be sure.

DAY 2:

1. Cook the orzo according to package, drain and add to leftover Au Gratin mix. Add a little more half-and-half and cheese as needed to make it a little more creamy. Heat in medium saucepan stirring occasionally. Make sure it doesn’t stick to pan.

Pumpkin Pie Cream Cheese

I found the original version of this recipe on the blog Budget Bytes. Beth has a great site and everyone should check it out. I made this recipe to bring to a pig roast this weekend and it was a huge hit! Everyone was raving about it. I served it with cinnamon raisin bagel chips. The only thing that went wrong is that I forgot to take a picture! I can’t believe it. When I remembered about the picture the cream cheese was all gone. I will be making it again this week once I get more cream cheese so I will remember to take a picture then!** Promise! I got several requests for the recipe also so it was a definite huge hit! Thanks Beth! I also doubled the recipe and used light cream cheese and the Splenda brown sugar blend. I also used my own pumpkin pie spice rather than a store-bought one. This way I know exactly what is in it.

Pumpkin Pie Cream Cheese Ingredients

INGREDIENTS:

8 ounces light cream cheese

½ cup canned pumpkin

2 tablespoons brown sugar

1 teaspoon vanilla

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice

DIRECTIONS:

Blend all ingredients in a food processor or using a hand mixer. Make sure all the cream cheese is blended well! Chill and serve!


Seafood & Cream Cheese Wontons

I have eaten many wontons in my life. But I have never made them myself. Well after I saw the recipe on Budget Bytes for Lobster & Cream Cheese Wontons I thought I should give it a try! How hard could it be! HA! It actually wasn’t that hard. The hard part was getting the hang of the wontons! First I put too much filling and it oozed out all over. What a mess. Then I put too little filling. And finally I think I got it right. Though my husband said it needed more filling. Next time I will improve. Promise! I found the wonton wrappers in the produce department near the organic stuff. They only had one size so that’s what I got. I also used light cream cheese, as usual. I have to say even though they were weird shapes, they did come out pretty tasty! I served them to my neighbors at the monthly “Girls Happy Hour” we have. They were a hit. The leftovers were gone that night when my husband got home. I served them with a teryiaki sauce for dipping. These little guys are so tasty and they are only lightly pan-fried to crisp and brown them a little bit. No deep-frying involved! And of course I added garlic to the recipe as well as some ginger.

INGREDIENTS:

8 ounces light cream cheese, softened

8 ounces Imitation crab or lobster meat (of use the real stuff if you can afford it!)

1 large egg

2-3 scallions, chopped

1 package wonton wrappers

½ teaspoon Sriracha Hot Sauce (In the asian food section)

1 teaspoon garlic powder

½ teaspoon ginger

Cooking Spray

DIRECTIONS:

1. In a large bowl combine the cream cheese, green onion, egg, Sriracha sauce, garlic and ginger. When it’s mixed well add the crabmeat breaking up the chunks as you mix them in.

2. Working on a pastry board or cutting board work in groups of about 6 wontons at a time. Have a small bowl of water to help seal the edges of the wrappers. Place about 1 teaspoon of the filling in the center of each wonton square. Using your fingers, wet the wrapper all along the edges on all 4 sides. Fold the wrapper over diagonally to form a triangle and pinch the edges to seal. Using more water if needed. Try to get as much air out of the center as possible and fold over the corners to wrap. If this doesn’t work, just fold or crimp the edges to seal as best you can. The shape doesn’t matter.

3. Bring a large pot of water to a boil. Working in groups of 8-10 wontons, drop them into the boiling water and remove once they begin to float (about 3 minutes). Place the boiled wontons on a cooling rack or large platter to drain. The wontons will look nice and transparent. Don’t put them on paper towels. They will stick to them if you do!

4. When you have all the wontons boiled and drained, heat a large non-stick skillet that has been sprayed with cooking spray, over medium-high heat. When the skillet is nice and hot, place about 8-10 wontons (depends on how many you can fit without overcrowding)in at a time. Cook on each side until they are golden brown, crispy and blistering a little in some spots. If you need more spray in the pan use as you go along. I had to add several times. This will crisp up the wontons nicely.

5. Serve warm with your choice of dipping sauce. Teriyaki sauce, soy sauce, ponzu sauce all work nice. Even have some hot chinese mustard or extra Sriracha sauce if you want! I also had leftover filling so I added some chopped celery and we made a spread for crackers with it! Delicious!

Makes about 32 wontons.

Baked Eggplant Italiano

This is my  version of a healthier eggplant parmigiana dish. Yes it can be done! I did not use any breadcrumbs and I didn’t fry the eggplant. That is where most of the fat and calories come from. Don’t get me wrong, I love the old-fashioned breaded and fried version of this dish but I just can’t have the extra fat and calories anymore. Plus it takes forever to fry it all! Next in line with the fat is the cheese used. I used a shredded, reduced fat 4 cheese Italian mix. It has reduced fat mozzarella, smoked provolone, Asiago and Romano cheese. It’s made with 2% milk so it has 33% less fat and 10% fewer calories than the full fat version. I broiled the slices of eggplant on a cookie sheet under the broiler and only sprayed them with olive oil cooking spray. The dish came out great. It is very filling even without all the extra bread crumbs! I really enjoy eggplant and this time I remembered to make it pretty soon after I bought it. I have a tendency to buy it and forget it’s in the refrigerator for days. Then when I go to use it, it’s all brown and spotty inside. Yuck! So this time I bought it and cooked it the next day! Remember when buying an eggplant the top crown should be green and not brown. Brown is bad, means it’s been there a while and not fresh. By the way, the leftovers are just as good as the first time too! (I started to cut the eggplant before I remembered to take a picture)

INGREDIENTS:

1 large eggplant

olive oil cooking spray

marinara or your choice of pasta sauce

Parmesan cheese, grated

garlic powder

2 cups reduced fat shredded Italian cheese of choice (Sargento’s 4 Italian Cheese is great)


DIRECTIONS:

1. Peel eggplant. Slice it lengthwise or if you prefer, round. For this recipe I sliced it lengthwise.

2. Set your oven to broil and place the rack about 4 inches under the broiler. Spray 1-2 cookie sheets with the cooking spray.

3. Place eggplant in a single layer onto cookie sheets. Spray tops of eggplant with cooking spray and sprinkle with garlic powder. Broil eggplant 4-5 minutes on each side. When you flip the eggplant spray again with cooking spray. Keep an eye on the slices as they can easily burn. They should be lightly browned on the edges and soft. Do this until all eggplant is broiled. After eggplant is done, move the rack to the middle and set your oven to 350º.

4. In a square Pyrex or other oven proof baking dish put a thin layer of sauce on the bottom of the dish. Lay eggplant slices on bottom slightly overlapping till you have one layer. It should take about 3 large slices. Next add sauce to top of eggplant and spread a thin layer over it. Sprinkle with grated Parmesan cheese and about ¼ cup of the shredded cheese. Place another layer of eggplant, again overlapping slightly. I placed this layer in the other direction to give it more stability. Again apply sauce and cheeses. Continue until you have no eggplant left. Finish with shredded cheese on top.

5. Place the dish into the 350º oven and bake until sauce is bubbling and the cheese is all melted. About 15-20 minutes should do it. Remove from oven and let sit 5-10 minutes to let the sauce set up. It’s ok if it’s a little runny. Cut and serve!

This dish is great with a nice salad on the side or even a small dish of pasta.

Serves 2-4

Crab Dip w/Garlic Saltines and Roasted Cherry Tomatoes

Ok, I can’t take the credit for this recipe but I will thank Tyler Florence for it! I saw this on his show on the Food Network one weekend and made it last week. It was delicious! Easy too! And the saltines are incredible! I am going to make another batch this weekend! Even John who doesn’t eat many carbs in the form of crackers loved them! He was adding peanut butter to the crackers! But the dip is awesome on it. It is also better to let it sit over night in the refrigerator. The flavors will meld better. I also used the lighter versions of cream cheese and mayonnaise in my version. A suggestion from John is to heat it up also and serve it as a hot dip. I haven’t tried that yet but when we do I will post the results on here! We had this as our appetizer to our Thanksgiving dinner last Sunday. Washed it down with a bottle or two of Prosecco.

INGREDIENTS:

For the crab dip:

1 (8oz.) cup cream cheese, at room temperature

½ cup mayonnaise

1 tablespoon Dijon mustard (DO NOT USE REGULAR MUSTARD)

½ tablespoon lemon juice

About 1 tablespoon EVOO (Extra-virgin olive oil), optional

Kosher salt and freshly ground black pepper

2 tablespoons chopped chives

1½ cups (about 12 ounces) fresh lump crabmeat, drained and picked over (I used claw meat and it was fine)

For the crackers:


2 cloves garlic, minced

¼ bunch fresh flat-leaf parsley, chopped

½ stick butter, melted (I used a butter substitute)

30 saltine crackers (about 1 sleeve)

For the tomatoes:

1 pint cherry/grape tomatoes

2 tablespoons balsamic vinegar

EVOO, optional

Kosher salt and freshly ground black pepper


DIRECTIONS:

Preheat oven to 350ºF.

For the crab dip:

1. In a food processor add the cream cheese, mayonnaise and Dijon mustard, blend until smooth. Then add the lemon juice and olive oil, if desired and season with salt and pepper. Process until well combined, scraping down the sides as you go.

2. Scoop the mixture into a large mixing bowl and fold in the chopped chives and crabmeat. Adjust seasoning with salt and pepper then cover and set aside in refrigerator.

For the crackers:

1. Meanwhile, prepare the saltines. Make a garlic butter by combining the minced garlic with parsley and melted butter.

2. Lay out a flat layer of saltines on a baking tray (I just sprayed it with cooking spray) and use a pastry brush to baste the saltines with garlic butter. Bake in the oven for about 5-7 minutes until golden.

For the tomatoes:

1. Split each tomato lengthwise and toss in a mixing bowl with balsamic vinegar. Toss the cherry tomatoes on a baking sheet and drizzle with a little olive oil, if desired, over the top. Season with salt and pepper and bake in oven for 7-8 minutes.

To Serve:

Arrange the three components so they can be assembled by easily. Take a saltine, spoon a little crab dip on top and garnish with a piece of tomato.

Makes 4-6 servings
