Shrimp w/Sour Cream and Onion Dip

Well back to somewhat of a normal week. Christmas is over but we still have New Year’s coming up. So this recipe today is a redo of a dip I posted some time ago. Originally the recipe called for the shrimp to be chilled in it for at least 8 hours. This time I just cut the recipe in half and used it in place of the usual cocktail sauce. Nothing against regular cocktail sauce but it gets boring. When I served this dip with the shrimp last week it was a huge hit! Everyone loved it. The small amount I had left over also turned a little bit pink from the red onion in it. Festive! So make up a batch for New Year’s Eve and enjoy!

INGREDIENTS:

¾ cup light mayonnaise

¼ cup light sour cream

3 tablespoons lemon juice

2 tablespoons sugar (or Splenda)

¼ cup finely chopped red onion

1 tablespoon dried dill

1 pound medium-large cooked shrimp, shelled and deveined

DIRECTIONS:

1. In a bowl combine the mayonnaise, sour cream, lemon juice, sugar, onion, and dill. Mix well. Chill to set up at least an hour.

2. Serve with shrimp!

Layered Greek Dip

This is such an easy and quick dip to throw together. There are only 5 ingredients! Nice! I love Greek food and we don’t get to go out for it too often. Probably because where I live in south Florida there are very few good Greek restaurants. We did find a great one in St. Augustine called Athena’s. But I’m not driving over 3 hours for Greek food! Anyway this is just a snack food anyway but it’s healthy too.

This is best in a round nine-inch pie plate but if you don’t have one, just use something else. A long oval dish is fine also. You want something that has sides so everything stays where it should.

INGREDIENTS:

7 ounces prepared hummus (any brand you like)

4 ounces crumbled light Feta cheese (use regular if you are not watching calories)

½ cup chopped tomatoes

¼ cup chopped cucumbers (best to use the English ones and leave the skin on)

2 tablespoons chopped Kalamata olives

oregano

DIRECTIONS:

1. Spread the hummus onto bottom of a 9″ pie plate or other serving dish.

2. Cover with feta cheese, tomatoes, cucumbers and olives.

3. Sprinkle with a little oregano if you wish.

4. Serve with baked pita chips!

Guacamole Kicked Up a Notch

Yes I know I’ve already done guacamole. But I had three very ripe avocados in the fridge that I thought were history. I figured I’d better check them out before I tossed them. I cut them open and surprise! They were still ok! A few little blemishes here and there but otherwise fine and dandy! So I made guacamole. But as I was making it I had the idea to make it a little different. I looked around in the fridge and came across two ingredients I would never have thought to put in guacamole. Fat-free plain Greek yogurt and gorgonzola cheese! Weird? Not so much! I had about ½ cup of yogurt so I put it in my little food chopper and added a large handful of crumbled gorgonzola cheese. It was about 1/3 cup or so. I processed it till it was pretty creamy and added it to the guacamole. The color of the guacamole got a little lighter but I tasted it and it was good! I let it sit for a few more hours and it was even better! Who would have thought! We will be eating it for the next few days on everything! There is quite a lot of it. The guacamole recipe is from my recipe that I posted back in June. Just click on the link to get the recipe and just add the yogurt and gorgonzola cheese and you are set! I am sure it would probably be good with blue cheese as well!

Pumpkin Pie Cream Cheese

I found the original version of this recipe on the blog Budget Bytes. Beth has a great site and everyone should check it out. I made this recipe to bring to a pig roast this weekend and it was a huge hit! Everyone was raving about it. I served it with cinnamon raisin bagel chips. The only thing that went wrong is that I forgot to take a picture! I can’t believe it. When I remembered about the picture the cream cheese was all gone. I will be making it again this week once I get more cream cheese so I will remember to take a picture then!** Promise! I got several requests for the recipe also so it was a definite huge hit! Thanks Beth! I also doubled the recipe and used light cream cheese and the Splenda brown sugar blend. I also used my own pumpkin pie spice rather than a store-bought one. This way I know exactly what is in it.

Pumpkin Pie Cream Cheese Ingredients

INGREDIENTS:

8 ounces light cream cheese

½ cup canned pumpkin

2 tablespoons brown sugar

1 teaspoon vanilla

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice

DIRECTIONS:

Blend all ingredients in a food processor or using a hand mixer. Make sure all the cream cheese is blended well! Chill and serve!


Red Radish Spread (updated)

It’s only been recently that I discovered I like radishes. Up until now I always thought I hated them. I really don’t know why. I don’t remember actually eating one when I was younger and deciding that it was gross. I don’t actually remember ever eating one before stating I didn’t like them. Then one day I decided to try one in my salad. Lo and behold I liked it! Go figure. So when I came across this recipe for a Red Radish Spread I thought it was a unique ingredient for a dip/spread. I am always looking for a different spread/dip to serve. We get tired of the same old onion dip, spinach dip, crab dip and so on. This recipe is also from The Queen Victoria Bed & Breakfast Inn that I mentioned in a post the other day.  There is nothing really weird in the recipe and though I haven’t actually made this yet I am going to get some radishes this weekend and give it a try.

INGREDIENTS:

8 ounces light cream cheese, softened

1 cup chopped red radish (a small bag should be good)

2 tablespoons horseradish

1 tablespoon lemon juice

½ teaspoon salt

¼ teaspoon dried dill

1 clove garlic, minced

DIRECTIONS:

Process all ingredients in a food processor. Cover and chill several hours.

Serve with crackers or veggies.

Makes 1½ cups

Ok, I made the spread. It came out delish! I know, this kind of looks like strawberries. It was very tasty though and I of course added more garlic than the recipe called for. Still great! So easy to make too. Try it!!

Homemade “Boursin” Cheese

Years ago I discovered Boursin Cheese. But that little container (only 5.2 ounces!) can be very expensive. I haven’t bought it in years because of that. It would also be gone in minutes because there isn’t much to it. This recipe may not give you a huge amount either (8 ounces at least) but you can also double the recipe and use lighter ingredients as well to save some calories and fat. It’s a cream cheese base so use the light cream cheese. I will not use fat-free cream cheese because I feel that it really loses all it’s flavor when you take away ALL the fat. But that’s just me. It’s up to you and what you wish. If calories are no object then by all means use the full fat version of cream cheese in the recipe. Another great thing about this recipe is that all the herbs and spices in it are very common and I would think most of us have them all on hand in our pantries. This recipe actually comes from The Queen Victoria Bed & Breakfast Inn. I had stayed there many years ago. The Inn is in Cape May, New Jersey and was a wonderful place, not far from the water. So give this a try and remember to make it the night before. It’s better that way, trust me! The spread itself is mild and is accented nicely by the crushed peppercorns. It’s a great spread with crackers during cocktail hour!

INGREDIENTS:

8 ounces cream cheese, softened

2 tablespoons butter

2 cloves garlic, minced

½ teaspoon fresh lemon juice

1 teaspoon dried oregano

½ teaspoon dried basil

1/8 teaspoon cayenne pepper

1/8 teaspoon salt

2 tablespoons finely chopped fresh parsley

freshly ground black peppercorns

DIRECTIONS:

1. Combine all ingredients in a food processor until smooth.

2. Shape into a ball or log and roll in crushed black peppercorns or place in a serving dish and sprinkle generously with coarsely crushed black peppercorns. Or just serve it in a decorative serving bowl! Your choice!

3. Best if refrigerated at least overnight before serving.

Makes 1 cup

Onion-Horseradish Dip

I am always looking for new and different dips. You get tired of the same old onion dip, same old guacamole, same old veggie dip and so on. I have a stack of magazines that I need to go through for recipes and tips etc. for the blog. One weekend I was going through the Better Homes and Gardens and came across some recipes that all used an immersion blender. You know, the little boat motor thing. This recipe can actually be made in a food processor as well but I followed the directions and used my immersion blender. After splattering myself as I always do, the dip was finished. It was delicious! I would also say it was better the next day. First day the flavors were a bit strong. So if you can wait a few hours or even overnight, it will be worth the wait. I also tweaked it as I always do. It calls for ¼ of a medium red onion. But as you will see in the pictures, I didn’t quite have it so I added a chopped shallot as well. (The pic shows 2 shallots, but I only added one) The garlic clove I used is pretty big, it probably equals 2 normal cloves but we like garlic! I also used heavy whipping cream, calories weren’t that much different from the light so I went for the extra flavor. You can serve with veggies which we did the second night but I had just found these incredible chips at BJ’s Wholesale Club. OMG! They are incredibly light and crisp, salty and just plain delicious! (110 calories in 33 chips!) This recipe also makes a great topping for a nice steak, chops or even chicken!

INGREDIENTS:

4 oz. wedge blue cheese (cheaper than buying crumbled)

4 oz. light sour cream (you can use regular if you want)

¼ cup whipping cream

¼ of a medium red onion, roughly chopped (or a large slice like I have above)

1 medium shallot, roughly chopped

1 clove garlic, minced

½ – 1 teaspoon prepared horseradish (I used 1 teaspoon- we love horseradish)

DIRECTIONS:

1. In a medium bowl crumble about ¾ of the blue cheese. Add the sour cream, whipping cream, red onion, shallot, garlic, and horseradish. Use an immersion blender* to blend cheese mixture until almost smooth.

2. Transfer to small bowl. Crumble remaining blue cheese and sprinkle over the top. Serve with veggies or chips!

* If you don’t have an immersion blender put ingredients in food processor and blend till smooth.

Makes 10 servings (2 TBSP): Each serving has about 85 calories, 8 grams of fat, 23 mg cholesterol, 170 mg sodium, 1 gram carbs, 3 grams protein

Sandwich Spreads

When we make sandwiches we usually put either mayonnaise or mustard or both on them. I’m the last person to put down mayonnaise but why not try something different. I actually use guacamole sometimes if I have leftovers in the fridge. Have to use it before it turns brown so I use it on sandwiches, hamburgers and even hot dogs! So good! I have a few other substitutes that we can all use on our sandwiches that will definitely give them more pizzazz! Don’t be scared, try it, you may like it. And I of course will use the light versions of most of these items if they are available. These spreads will last up to a week in the fridge!

BLUE CHEESE & WALNUT BUTTER

This is great on roast chicken, beef or apple sandwiches.

Beat ½ cup soft butter and ½ cup crumbled blue cheese in a bowl. Stir in ¼ cup chopped toasted walnuts. Makes 1 cup

CREAMY PEPPERY GREENS

This is great on roast beef or corned beef sandwiches.

Stir 1/3 cup minced arugula, 1/3 cup minced radicchio, 1 tablespoon lemon juice, salt and pepper  into 1 cup mayonnaise. Makes 1 2/3 cup.

FIG JAM

This is great for turkey or grilled cheese sandwiches.

Plump 1 cup chopped dried figs in 3 cups hot water for 25 minutes. Drain the figs, reserving some liquid. Puree in a food processor. Add the saved liquid until the mixture is spreadable. Like jam! Stir in ¼ teaspoon orange zest. Makes 2/3 cup.

ZESTY WHITE BEAN

This spread is delicious on ham, veggie or tuna steak sandwiches.

Blend one 15-ounce can rinsed cannellini beans in a food processor with 1 teaspoon lemon zest, 1 teaspoon fresh thyme, salt, pepper and 2 tablespoons olive oil. Makes 1 cup.

Ranch Dressing

Ranch dressing is my all time favorite go to dressing. Ever since I tasted Hidden Valley Ranch years ago I was hooked (still think they make the best bottled Ranch ever!). I have tried over the years to make my own and finally found a recipe that is pretty darn good! I have made my own dressings for a while now. I know exactly what is in them and I can watch the fat, sugar and so on. Granted they don’t last as long as bottled dressings but then again they aren’t full of preservatives either. Ranch dressing is one of the best-selling dressings out there! It is used on everything from chicken wings (though I still prefer blue cheese for this) to pizza! This is a super easy recipe and your body will thank you for it! It’s also a low-calorie version so it’s even better for you! In one tablespoon there is only 25 calories and 2 grams of fat! That is great! So give it a try! Let me know on here if you do try this and how you liked it!

INGREDIENTS:

½ cup reduced-fat buttermilk

½ cup light or fat-free sour cream

½ cup light mayonnaise

2 tablespoons chopped chives (1 tablespoon dried)

2 tablespoons chopped fresh parsley (1 tablespoon dried)

1 garlic clove, crushed/minced

2 teaspoons fresh lime juice

Coarsely ground black pepper


DIRECTIONS:

Combine all ingredients in a bowl. Whisk well! That’s it you are done!

Makes about 1½ cups.

Per (1 tablespoon) serving: 25 calories, 2 grams fat, 5 mg cholesterol, 1 gram protein, 1 gram carbs, 0 grams fiber, 50 mg sodium, 1 point for Weight Watchers


Crab Dip w/Garlic Saltines and Roasted Cherry Tomatoes

Ok, I can’t take the credit for this recipe but I will thank Tyler Florence for it! I saw this on his show on the Food Network one weekend and made it last week. It was delicious! Easy too! And the saltines are incredible! I am going to make another batch this weekend! Even John who doesn’t eat many carbs in the form of crackers loved them! He was adding peanut butter to the crackers! But the dip is awesome on it. It is also better to let it sit over night in the refrigerator. The flavors will meld better. I also used the lighter versions of cream cheese and mayonnaise in my version. A suggestion from John is to heat it up also and serve it as a hot dip. I haven’t tried that yet but when we do I will post the results on here! We had this as our appetizer to our Thanksgiving dinner last Sunday. Washed it down with a bottle or two of Prosecco.

INGREDIENTS:

For the crab dip:

1 (8oz.) cup cream cheese, at room temperature

½ cup mayonnaise

1 tablespoon Dijon mustard (DO NOT USE REGULAR MUSTARD)

½ tablespoon lemon juice

About 1 tablespoon EVOO (Extra-virgin olive oil), optional

Kosher salt and freshly ground black pepper

2 tablespoons chopped chives

1½ cups (about 12 ounces) fresh lump crabmeat, drained and picked over (I used claw meat and it was fine)

For the crackers:


2 cloves garlic, minced

¼ bunch fresh flat-leaf parsley, chopped

½ stick butter, melted (I used a butter substitute)

30 saltine crackers (about 1 sleeve)

For the tomatoes:

1 pint cherry/grape tomatoes

2 tablespoons balsamic vinegar

EVOO, optional

Kosher salt and freshly ground black pepper


DIRECTIONS:

Preheat oven to 350ºF.

For the crab dip:

1. In a food processor add the cream cheese, mayonnaise and Dijon mustard, blend until smooth. Then add the lemon juice and olive oil, if desired and season with salt and pepper. Process until well combined, scraping down the sides as you go.

2. Scoop the mixture into a large mixing bowl and fold in the chopped chives and crabmeat. Adjust seasoning with salt and pepper then cover and set aside in refrigerator.

For the crackers:

1. Meanwhile, prepare the saltines. Make a garlic butter by combining the minced garlic with parsley and melted butter.

2. Lay out a flat layer of saltines on a baking tray (I just sprayed it with cooking spray) and use a pastry brush to baste the saltines with garlic butter. Bake in the oven for about 5-7 minutes until golden.

For the tomatoes:

1. Split each tomato lengthwise and toss in a mixing bowl with balsamic vinegar. Toss the cherry tomatoes on a baking sheet and drizzle with a little olive oil, if desired, over the top. Season with salt and pepper and bake in oven for 7-8 minutes.

To Serve:

Arrange the three components so they can be assembled by easily. Take a saltine, spoon a little crab dip on top and garnish with a piece of tomato.

Makes 4-6 servings
