Scallop & Broccoli Casserole

Well earlier today when I was trying to decide on what recipe to use in today’s blog I was stumped. I did come across a great breakfast dish I found in a magazine while I was in the gym (I read my food magazines while on the LifeCycle). But then I started making dinner with what I found in the fridge and freezer. So that became today’s blog. The final finished picture will be added to the post once it finishes baking!


Well 10 days from today I am returning to the land of the employed. I got a job at AAA South. It is a temporary seasonal position but hopefully it’ll become more. I will be working the reception desk. This will be a huge challenge for me as anyone who knows me, knows “the face”. I will leave it at that. But this job will also take time away from blogging. So I am going to try and get ahead for the first work week anyway. We will see how that works. Because as it is now I am just getting around to the blog and it’s almost 8pm! Imagine when I have a real job! So bear with me  when I start working (Jan.31 to be exact). So here is today’s recipe.

INGREDIENTS:

1 pound bay scallops

2 cups cooked brown rice (I like jasmine)

2 cups chopped broccoli, no stems

2 Laughing Cow cheese wedges, chopped (I used French Onion)

1 medium sweet onion, chopped

4-5 cloves garlic, chopped (Less if you aren’t a fan of garlic! Perish the thought)

1 teaspoon dried basil

½ teaspoon oregano

½ teaspoon crushed red pepper flakes

½ cup white wine (any kind you choose)

1 cup Locatelli romano cheese (or any kind of grated parmesan/romano you want)

2-3 tablespoons olive oil

salt and pepper to taste

TOPPING:

4 tablespoons butter/butter substitute melted

1 cup panko bread crumbs

DIRECTIONS:

1. In a large heated sauté pan add olive oil. Add the garlic and onion and sauté until just tender. Add the chopped Laughing Cow cheese.

2. Add the broccoli and sauté for about 3-5 minutes until all liquid seems to be evaporated. Add the basil, oregano and pepper flakes. Stir. Add ¼ cup of the white wine and sauté for another 5 minutes.

3. Place the rice in a large bowl. Add the veggie mix to the rice.

4. Add the scallops to the pan and cook for a minute or so. Add another ¼ cup of the wine and continue cooking for about 5 minutes or until the scallops are opaque. Add them to the bowl of rice and vegetables.

5. Add the romano cheese to mixture and stir thoroughly. Add to casserole dish of choice.

6. Blend the panko bread crumbs with the melted butter. Spread evenly over the top of the casserole.


7. Bake in a 350ºF oven for 45 minutes. Topping should be browned and bubbly.


Chicken and Sausage Gumbo

First let me say that I have not actually made this recipe yet. But I will, soon. My husband loves gumbo. Me, I could take it or leave it. Mainly because there are peppers in it. Remember, I am the one Italian who doesn’t like sweet peppers. I know, weird. But I am willing to give this a try and I will make sure I chop the pepper very small so I can’t pick them out! You should see me at restaurants! Anyway, I got this recipe in my email today from Cooking Light. It’s actually from their November 2002 issue! So it’s been around a long time. I have changed a few things of course (though I am leaving the peppers in!). The recipe calls for boil-in-bag rice. Not happening in this house. I will use jasmine brown rice. I always make a huge batch and freeze it in small packages, for occasions just like this! And it also called for turkey kielbasa. I will use chicken sausages of some kind. The recipe originally called for bottled minced garlic. Again, not in my house! I will use fresh garlic and probably double it!

What is also really great about this recipe is that most of it uses frozen vegetables. This will save time if you’re making it last-minute. But if it’s last-minute you might not have the ingredients on hand so think ahead anyway. And if you do not like to use frozen vegetables like onion, peppers, okra etc. use fresh. But remember the frozen ones are already all cut up for you and cook faster! Another way to make this a little different is to add some shrimp to the last step also. Probably about a half pound or so of uncooked. It will cook fast so be careful.

INGREDIENTS:

2 cups cooked rice of choice (I prefer jasmine brown rice)

2 tablespoons all-purpose flour

1 tablespoon vegetable oil

1 cup frozen chopped onion

1 cup frozen chopped green bell pepper

1 cup frozen cut okra

1 cup chopped celery

2 teaspoons minced garlic

½ teaspoon dried thyme

¼ teaspoon ground red pepper

2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)

8 ounces chicken sausage of your choice, cut into 1-inch pieces

1 (14½ ounce) can diced tomatoes with peppers and onion

1 (14½ ounce) can fat-free, less-sodium chicken broth

DIRECTIONS:

1. If you are cooking rice now make the gumbo while it is cooking.

2. Combine the flour and oil in a Dutch oven or large soup pot. Saute over medium-high heat for about 3 minutes. Add the onion, green pepper, okra, celery, garlic, thyme, and ground red pepper. Cook for about 3 minutes or until tender, stirring frequently.

3. Stir in the chicken, sausage, tomatoes, and broth, cook 6 minutes or until thoroughly heated. Serve over rice.

Makes 4 servings (1½ cups gumbo and ½ cup rice)

Quick & Easy Pizza

I know many people have posted pizza recipes lately. Mine is just the plain and simple ordinary kind. No fuss no muss. I used to make pizzas all the time but stopped for some reason. Then I decided to give the ole dough boy another go. No I do NOT make my own crust. Don’t have time or the patience. So I do the next best thing. I buy the Pillsbury pizza crust in the tube. I like crispy crust so we get the one for thin crust. Fewer calories than the thick one too. I won’t be calling this a diet dish because of the crust but it’s not so bad.

I use my own sauce which I add garlic powder and oregano to. Add some red pepper flakes for more kick if you want. The pizza I made the other day is just a plain pepperoni/sausage cheese pizza. I have one of those stoneware baking pans from Pampered Chef and I used that. When I precooked the crust I sprayed it with a little olive oil cooking spray and sprinkled sesame seeds all along the edges. Came out so tasty and crispy! Not doughy at all. I usually buy the shredded mozzarella cheese but this time I had a coupon for the block so I grated it myself. Much better actually, the cheese was creamier and seemed to have more flavor. I did use part-skim mozzarella of course.

The pepperoni I used was the regular kind and I also used 2 chicken sausages. I peeled the casing off the sausage and cut them into big chunks and put them in the food processor. This way I had ‘ground’ sausage to spread over the pie! Came out awesome. I used the al fresco brand sun-dried tomato chicken sausage. I always stock up on those when they are BOGO in the stores. They freeze wonderfully. Oh and on one half of the pie (my half) I added 4 anchovies as well.  So here is the recipe.


INGREDIENTS:

1 tube of Pillsbury pizza crust

½ cup or so of your favorite tomato sauce/pizza sauce

garlic powder

pepperoni

2 chicken sausages ground up (any Italian flavor is good)

1 cup or so grated part-skim mozzarella cheese

sesame seeds

anchovies if you want

DIRECTIONS:

1. Follow directions on package for oven and pre-cooking the crust. When you have the crust on your baking sheet sprinkle sesame seeds all along the edges. Use as much as you wish.

2. When crust is ready spread the tomato/pizza sauce all over and up to the edges. Sprinkle the ground sausage evenly over the pizza. If you add anchovies place them on evenly through the pie. Spread the cheese evenly on top of that and then top with pepperoni.

3. Bake according to directions on package. I actually put the oven up to 450ºF. I think it calls for 375ºF. I like it more well done. Just keep an eye on it so it doesn’t burn. Check on it after the time is up to make sure the cheese is all melted and bubbly.

Serve it up!


Garlic Cheese Grits and Shrimp

So for the next four days my husband and I are heading to Charleston, SC. I thought I’d look up some local recipes and adapt them to my cooking style. I have heard so much about their shrimp and grits so I figured I’d start there. My husband loves grits (he should marry them!) and I like them. We both like shrimp and garlic so this recipe seemed like a no-brainer. I haven’t made it yet but I do plan to once we get back from our trip. I am going to definitely try it while up there though! The original recipe called for 6 ounces of garlic flavored processed cheese. I am going to be using 8 wedges of Laughing Cow Light Garlic & Herb cheese. Fewer calories for sure and still with all the flavor. I would also use fat-free chicken broth instead of water when cooking the grits. Again, more flavor!


INGREDIENTS:

¾ cup uncooked grits

6 ounces Laughing Cow Light Garlic & Herb cheese (8 wedges)

pinch of cayenne pepper

2 tablespoons butter (or butter substitute)

2 tablespoons olive oil

2 cloves garlic, minced

1 tomato, diced

2 pounds fresh shrimp, peeled and deveined

½ lemon, juiced

salt to taste


DIRECTIONS:

1. Cook grits according to package directions. Stir in the Laughing Cow cheese and cayenne pepper. Keep warm over low heat.

2. Heat butter and oil in a large skillet over medium-high heat. Saute garlic and tomato until tomato begins to soften. Stir in shrimp and lemon juice. Saute until shrimp are pink. Season with salt to taste.

3. Spread warm grits on a serving platter and pour shrimp mixture on top.

Serves 4

Italian Chicken Chili Alfredo

Boy that’s a mouthful! I was trying to come up with a simple title but couldn’t. Originally when I made this I was going for a regular chili with chicken instead of ground beef. As I went along I kept changing my mind. I had also  just bought a jar of Classico Light Creamy Alfredo Sauce and thought it would make a tasty addition. The sauce is a new product for the Classico line of sauces. It only has 60 calories and 5 grams of fat in ¼ cup. Compared to over 110 calories and 10 grams of fat for the same amount. It was really good and I didn’t feel bad about eating it!

I also added two kinds of beans to this recipe, white canellini beans and black beans. Another item I always have on hand in my freezer are those pre-cooked chicken sausages. They are really very good and lower in calories and fat. I usually have the Italian style which is what I used in this recipe. The chicken breast I used was the Perdue portion sized boneless breasts. They come in those individually wrapped packages. They were on sale and I had a coupon! I used the white wine and garlic seasoned ones but you can use any kind you want.

This was a great protein, fiber-filled meal. My husband really liked it and I can make it again so it’s a winner! Great for the fall or when you want an easy dinner. Leftovers are even better! If you want you can even add rice or pasta to the dish to stretch it even more. It’s up to you!

INGREDIENTS:

2 small onions (or 1 large), chopped

3 cloves garlic, chopped (use less if you don’t like a lot of garlic)

3 boneless, skinless chicken breasts (about 1 pound or so), cut into bite size pieces

2 Italian Style Chicken Sausages (precooked kind)

1 can (15-16 oz.) white cannellini beans, rinsed and drained

1 can (15-16 oz.) black beans, rinsed and drained

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon red pepper flakes

2 tablespoons fresh parsley, chopped

1 small-medium tomato, chopped small

½ cup mushrooms, chopped

1 jar (15 oz.) Classico Light Creamy Alfredo Sauce

2 tablespoons Extra-Virgin Olive Oil

Parmesan Cheese for topping (optional)

DIRECTIONS:

1. In a large pan heat olive oil on medium heat and sauté the chicken pieces. Remove from pan and set aside when browned and mostly cooked, about 5 minutes.

2. In the same pan add the onion and garlic and sauté, on medium heat, till soft, about 5 minutes. Careful not to burn the garlic.

3. Add the mushrooms, sausage, basil, oregano, and red pepper flakes and cook for another 5 minutes. Stirring occasionally.

4. Add the tomatoes and stir in. Add the beans and continue to stir and cook for another 3 minutes or so until beans are heated through.

5. Add the alfredo sauce and simmer for 10-15 minutes. Stir occasionally. Add fresh parsley and serve.

Makes 6 servings

Garlic Parmesan Orange Roughy

When I started writing this blog about 6 months ago I really just wanted to put the recipes down that I have accumulated over the years. I had been posting my dinner photos on Facebook and people kept asking for recipes so here I am! I’ve discovered so many cool blogs about food, drink, life etc. recently and love it. I’m making some new “blog friends” from all over the country. It’s great. I just joined The Petite Chef also. And from that site I found last nights main dish for dinner. I had some orange roughy and I didn’t want to make the same old thing so I searched and came up with today’s dish. It was posted by Food Corner and it was a huge hit! Garlic Parmesan Orange Roughy was delicious. I did change a couple of things slightly though. I added some fresh chopped Italian parsley to my topping and used a butter substitute rather than real butter. The only problem I had was I melted the butter too much. It was supposed to be softened, not melted. So it ran a bit. Oh well, it came out great anyway. John loved it which was a good thing. I can make it again! I also only had 2 fillets (14oz total) and I didn’t change the quantities and it still came out great. I served it with a new green bean recipe that I came up with which I will post tomorrow. No leftovers! So thank you to Food Corner for your delicious recipe! It was also very easy and quick. Always a good thing after a long day. Enjoy!

INGREDIENTS:

4 (4 ounce) fillets orange roughy (or other mild white fish)

 

Uncooked Orange Roughy

 

½ lemon

½ cup grated Parmesan cheese

¼ cup butter, softened

¼ cup prepared Dijon mustard mayonnaise blend (I made up my own/equal parts mayo/mustard)

1 large clove garlic, minced

¼ teaspoon salt

2 tablespoons chopped fresh Italian parsley

paprika

 

Topping ingredients

 

DIRECTIONS:

1. Preheat the oven’s broiler and set the oven rack about 6 inches from the heat.

2. Place the orange roughy on the broiler pan and squeeze the lemon over the top of the fish. Broil the fillets in the preheated oven for about 6-8 minutes. (I put the fillets on aluminum foil on top of the broiler tray. I hate cleaning up!)

3. While the fish is cooking, combine the butter, parmesan cheese, dijonnaise, garlic, parsley and salt in a small bowl.

4. Remove fish from oven and spread the cheese mixture over the tops of the fillets. (I had to pour mine as I had melted the butter. Still worked.) Sprinkle the top with paprika.

5. Broil another 3 minutes or so until the topping is lightly browned and the fish flakes easily with a fork. (Mine did not brown too much because I had melted the butter.)

6. Serve! You can serve it with any vegetable or even pasta as a side. Enjoy!

Microwave Shrimp Scampi

No matter how many Italian restaurants you go to,  if you order Shrimp Scampi you will rarely get the same thing twice. I think every restaurant has their own version of this simple and delicious meal. Some bread the shrimp, some have a creamy sauce, some grill the shrimp, some have lots of garlic, others don’t. The list can go on and on. Years ago I came across a recipe for the microwave that is so simple and fast that I use it quite a bit. I also adapted it of course to my cooking style. I used to serve it over linguini. Those days are over! Now I use the Tofu Shirataki Noodles for the most part. You can also use any small pasta like orzo or even rice. Linguini or spaghetti shaped pasta, wheat or regular is always a good choice though. It’s up to you. My recipe also calls for a little more garlic than most people like, so if you are one of those who aren’t crazy about lots of garlic, just put less in. This recipe is a great “go to” recipe if you need something fast, and happen to have shrimp in the freezer. I always have shrimp on hand. I stock up. (Yes, for when our friend Andre is visiting!) No really, I actually buy my shrimp at Walmart. No joke. We have a Super Walmart where I do most of my grocery shopping. They sell a 14 ounce bag of frozen cooked and cleaned or raw, large shrimp for $5! Sometimes they have the extra-large, same 14 ounces, for $6. Everytime I go I try and get another bag. This way I always have shrimp on hand. It’s great for any unexpected guests who pop in too. Shrimp cocktail is always a winner! A quick way to defrost that bag of frozen shrimp? Just put the shrimp in a large bowl (yes take it out of the bag first) and cover with cool water. Not hot or warm water. Cool water. Check after about 10-15 minutes, if shrimp is still a little frozen, dump the water and add fresh. It shouldn’t take more than another 5 minutes. Easy! Oh and I don’t know if you are like me when it comes to “shrimp tails” but I think it is such a pain in my butt to have to stop and remove the tail while eating! Every single restaurant leaves them on. Sure they look nice but really. Do we need to make a mess trying to get that tail off and not ending up with it in our lap? I think we can forgo the tail! So in this recipe, remove the tails before cooking along with the rest of the shell! Whew, thanks for letting me vent! And now for the recipe!

INGREDIENTS:

½ cup butter (or butter substitute)

2 tablespoons dried parsley

2 tablespoons lemon juice

3 cloves garlic, minced

1 pound raw large shrimp, cleaned and DE-TAILED (you will thank me!)

½ teaspoon salt

¼ cup white wine (any kind you have is fine)

Paprika (optional)

Parmesan cheese


DIRECTIONS:

1. Melt the butter in a 2 quart microwave safe bowl or casserole dish. Stir in the parsley, lemon juice, garlic, wine and salt.

2. Add shrimp and toss to coat. Cover with plastic wrap or wax paper or other type of cover.

3. Microwave on HIGH until shrimp is pink/opaque and tender, about 3-6 minutes, stirring twice.

4. Serve over linguine, spaghetti, orzo, rice, quinoa, or whatever you want! Sprinkle some paprika on top if desired. Serve with parmesan cheese for the top and maybe some nice crostini or Italian bread to soak up the garlic butter!

Baked Shrimp Quiche (Formerly Known as Baked Shrimp Balls!)

Yes, the shrimp balls did not come out so good. I followed the directions and though they looked and smelled good they tasted pretty bad. So the next night I took all 25 or so of them, crumbled them up in a large bowl. This didn’t take much as they were falling apart to begin with! They already had onions, garlic, and the rest of the ingredients so I was halfway there! I just added 1 cup of egg beaters, 1 cup fat-free half-and-half, about 10 ounces frozen chopped spinach (thawed and squeezed out) and some shredded low-fat cheese. (About 2 cups). Threw it all in a large round casserole dish and baked it for about 45 minutes at 350º. And presto! A delicious dinner saved! So much better all around. And since I don’t use a crust you save more calories!

Tex Mex Calzone

Ok everyone, I am cheating again today. I got so far behind with doing other stuff today that the blog just got buried. I’m supposed to be making dinner right now and that will be late as well. Don’t even know for sure what it will be! Anyway, this is a recipe video on a Tex Mex Calzone. It’s ‘redone’ which means it’s made a little on the healthier side. Hope you enjoy it!

Veal Scaloppine

The next time you see veal cutlets on sale buy some and try this recipe. You can also make this recipe using pork cutlets which are much cheaper or if you are weird about eating veal. My husband loves veal and is always upset when we eat at an Italian restaurant and they don’t offer it! The nerve! I guess you can also make this with chicken cutlets as well but veal or pork is best. This is a very simple recipe and isn’t loaded with fat. A taste treat for everyone! It is sort of like a veal Marsala really but you can call it whatever you want as long as you make it!

INGREDIENTS:

1 pound veal or pork cutlets

flour

6 tablespoons olive oil

1 garlic clove, minced

pepper to taste

½ cup sherry or dry white wine

2 tablespoons chopped parsley

8-12 mushrooms, sliced

DIRECTIONS:

1. If veal or pork is thick slice in half, carefully and place pieces between two pieces of wax paper or plastic wrap. Pound thin with a mallet or meat pounder to about ¼ inch. If you can get the cutlets that thin to begin with even better! Cover lightly with the flour.

2. Add oil to a large skillet and sauté the veal and garlic for 3-4 minutes on each side. Sprinkle with pepper. Add the sherry or wine, parsley and mushrooms. Simmer for 10 minutes.

3. Serve with any side you want. Potatoes, rice, pasta, broccoli, or any vegetable.
