Devilish Oven Fried Chicken w/Green Beans

I swore I would do the blog in the morning, so that when 7pm rolled around I wasn’t scrambling to get dinner ready and writing my blog at the same time. But here I am at 7:15pm writing the blog. I get so swamped in the morning. Between getting up with my husband at 7am, make his lunch & breakfast for him to take to work, feed the cats, clean the litter boxes, take the garbage out for pickup, do two more loads of laundry, check my email, eBay and whatnot…Oh and I wanted to do my daily walk as well at around 10am. HA! It was noon by the time I did that. So once the morning was gone the thought of writing the blog was too. I spent the afternoon job hunting as usual. No luck. So here I am now writing about a yummy dish I made last night. The original version of this recipe is from Rachael Ray (my fave!) and I changed it to suit what I had in the house. It originally called for 4 chicken legs w/thighs. I had 5 chicken thighs. The recipe also called for removal of the skin! I know! I left it on. That is pretty much it on what I changed. Though next time I am adding more hot sauce. Recipe only called for 1 tablespoon, not enough. I would add about ¼ cup next time. I served it with a side of green beans. The beans were the frozen kind in a ‘steamer’ bag. I was steaming them for about 5 minutes in the microwave till I heard the bag pop! No, it’s not supposed to do that! So I took them out of the microwave. In the meantime I had sautéed a shallot and 3 cloves of garlic in a little olive oil. I drained and dumped the beans into a microwave container and added the shallots and garlic. Then I added about 4 ounces of crumbled light feta cheese. Then I put it all back in the microwave for another minute or so. By then the chicken was done! Whew! So without anymore babbling here is the chicken recipe!

Chicken thigh with the delish green beans!

INGREDIENTS:

¼ cup Dijon mustard

¼ cup reduced-fat plain greek yogurt

¼ cup hot sauce (I used Frank’s Buffalo Wing Sauce)

4 large whole chicken legs separated from thighs (I used 5 thighs)

¼ cup extra-virgin olive oil

1 1/3 cup panko bread crumbs

4 teaspoons italian seasoning (only if you don’t have seasoned bread crumbs)

salt and pepper

DIRECTIONS:

1. In a large bowl, whisk together the mustard, yogurt and hot sauce. Add the chicken, turning to coat and let stand at room temperature for 30 minutes. If you aren’t ready to cook right away cover and refrigerate for up to 12 hours.

2. Place a rack in the upper third of the oven and preheat to 400º. Line a baking sheet with parchment paper and grease with 2 tablespoons of the olive oil.

3. In another large bowl, toss together the panko bread crumbs and Italian seasoning. Skip this if you have seasoned panko. Add 1 teaspoon salt and ¼ teaspoon pepper to crumbs. Working with 1 chicken piece at a time, coat in the panko mixture and place on the prepared baking sheet. Drizzle with the remaining 2 tablespoons olive oil and bake until golden brown and cooked through, about 40 minutes.

Cauliflower au Gratin w/Panko Crusted Flounder

Today’s post I have to give props to Biz at My Bizzy Kitchen. (see the original recipe at My Bizzy Kitchen)The cauliflower au gratin part of the recipe is from her blog and it is so good I had to rave about it today. I had to make a few changes to the recipe only because I didn’t have all the exact ingredients. Original recipe called for skim milk, I didn’t have any so I used fat-free half-and-half; original recipe had mozzarella cheese and blue cheese, I used swiss and gorgonzola, which I had. It still came out great. I also didn’t cook the sauce long enough for it to thicken but it still came out great. There were no leftovers which is a good sign it was edible! I served it with panko crusted flounder fillets. For these I just dredged the fillets in a little soy flour, dunked in egg/milk mixture and then coated with panko bread crumbs. Just fry them in a large pan with enough oil to cover the bottom of the pan. You don’t need a ton of oil so don’t go freaking out that it’s fried. I used olive oil also. Actually the entire dish is pretty low-calorie.  Lots of protein and vitamins!

So before you look at the finished photo remember, the sauce was a bit watery! But, I also discovered that it tastes great poured over the fish as well! (no pic of that of course!) So all in all I would make this again. Very easy actually and cooked pretty fast. Oh also, the original recipe called for cooking the cauliflower first on the stove in water. I cooked mine in the microwave. Less heat since I was using the stove for the flounder and the oven was heating up for baking the cauliflower.

INGREDIENTS:

1 medium head cauliflower, washed and cut into bite size pieces

1 cup fat-free half-and-half

1 tablespoon butter (I used a butter substitute)

1 tablespoon flour (I used soy flour)

3 ounces shredded swiss cheese (You can use mozzarella, monterey jack or cheddar too)

1 ounce crumbled gorgonzola cheese (You can use blue cheese too)

1 tablespoon Italian bread crumbs (I used panko)

DIRECTIONS:

1. Place the cauliflower in a microwave safe container with about ¼ cup of water. Cover and cook on HIGH for 6-8 minutes, checking halfway through to see if it’s tender. Drain water when done. Set aside.

2. While the cauliflower is cooking melt the butter in a medium saucepan. Stir in the flour and cook on medium heat for about 1 minute. Slowly add the milk, making a white sauce, stirring constantly. (Here is where I apparently didn’t cook it long enough. You can raise the heat a bit and keep stirring until it thickens up a bit. Don’t worry if it doesn’t. It’ll still taste good.)

3. Remove saucepan from the heat and mix in the other cheeses until they all melt. The gorgonzola or blue cheese may not melt all the way but that is fine as it will continue to melt in the oven. Add the cauliflower and mix well. If it’s easier to mix the cauliflower in the casserole dish you are going to use that is fine. That’s what I did. Top with the bread crumbs and bake at 425º for 15-20 minutes. I put the broiler on for a minute or so just to brown it up a little more. The cheese should be nice and bubbly! Serve

Voila! Flounder and Cauliflower au Gratin!

Makes about 4 servings.

Parisian Green Beans

Ok I have no clue why these are called “Parisian”. Maybe because they dress up plain old frozen green beans into something fancy? I’ve never been to Paris, maybe this is how they serve them there. It could be because the French were the first ones to put green beans on their menus! No matter what the reason, this recipe is great. It’s different from your normal ho-hum green beans. As you all know I normally double or triple the garlic amounts in recipes but this one already has 3 cloves in it so I think that’s enough. It’s also got bell pepper flakes, which is something you don’t see too often in recipes. (It should be in the spice aisle). Dill weed and walnuts round out this recipe giving it that something extra. It’s a very low-calorie recipe, low carbs, and good fiber! If you have nut allergies, leave out the walnuts. My husband would also insist on putting parmesan cheese on top of these as well. Making it Italian/French! Bon appetit!

INGREDIENTS:

32 ounces frozen green beans, cooked

3 garlic cloves, minced

1 tablespoon extra-virgin olive oil

¼ cup bell pepper flakes

1 tablespoon dill weed

½ teaspoon salt

¼ cup chopped walnuts

DIRECTIONS:

1. Cook beans as directed on the package. Drain any liquid off.

2. Heat a skillet on medium with the olive oil. Add beans to skillet. Add the rest of the ingredients and cook over medium heat for about 5-7 minutes.

Makes 6 cups


Red Radish Spread (updated)

It’s only been recently that I discovered I like radishes. Up until now I always thought I hated them. I really don’t know why. I don’t remember actually eating one when I was younger and deciding that it was gross. I don’t actually remember ever eating one before stating I didn’t like them. Then one day I decided to try one in my salad. Lo and behold I liked it! Go figure. So when I came across this recipe for a Red Radish Spread I thought it was a unique ingredient for a dip/spread. I am always looking for a different spread/dip to serve. We get tired of the same old onion dip, spinach dip, crab dip and so on. This recipe is also from The Queen Victoria Bed & Breakfast Inn that I mentioned in a post the other day.  There is nothing really weird in the recipe and though I haven’t actually made this yet I am going to get some radishes this weekend and give it a try.

INGREDIENTS:

8 ounces light cream cheese, softened

1 cup chopped red radish (a small bag should be good)

2 tablespoons horseradish

1 tablespoon lemon juice

½ teaspoon salt

¼ teaspoon dried dill

1 clove garlic, minced

DIRECTIONS:

Process all ingredients in a food processor. Cover and chill several hours.

Serve with crackers or veggies.

Makes 1½ cups

Ok, I made the spread. It came out delish! I know, this kind of looks like strawberries. It was very tasty though and I of course added more garlic than the recipe called for. Still great! So easy to make too. Try it!!

Greek Green Beans

Ok as promised here is the recipe for the green beans I made with the orange roughy yesterday. I used frozen green beans. I actually use frozen veggies quite a bit. This way I always have something in the freezer to go to when I’m out of fresh stuff. I usually have those ‘steamer’ bags of veggies but this time I had bought one of the larger bags, 16 ounces. For two of us that is too much to make at once so for this recipe I used half the bag or 2 cups. This is also a quick and easy side dish for any entrée. It is also a low-calorie side dish. While the beans were being nuked I sautéed the onions and garlic and it worked out great. So without any further ado here is the recipe.

INGREDIENTS:

2 cups frozen green beans (any kind you like)

2 tablespoons water

1 small onion, chopped small

1 clove garlic, minced

2 tablespoons olive oil

¼ cup crumbled reduced fat feta cheese

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes

2 tablespoons butter substitute (you can use real butter if you want)

DIRECTIONS:

1. Place green beans in a small microwave container with lid. Add the water. Cook on HIGH for 6 minutes.

2. Meantime in a small pan sauté the onion and garlic in the olive oil. Cook until soft and just starting to brown a little. About 6 minutes. Add the basil, oregano and pepper flakes. Stir well.

3. The beans should be done now. Drain the excess water from container. Add the butter/butter substitute and onion mixture. Mix well.

4. Microwave on HIGH for 2 minutes.

5. Stir in feta cheese and serve.

Makes 2 servings (1 cup each)

Tabouli with Quinoa

Usually I am not a big fan of mint. No mojitos for me.  And definitely none of that flourescent green mint jelly when I have lamb! That is wrong to my taste buds on so many levels. Luckily my husband is not a fan either. So many recipes have mint in them and most of the time, to me anyway, it’s too much. So when I tried Tabouli years ago I was surprised to find that there was mint in it! Imagine that! I liked it in spite of that! And now with my new favorite food, quinoa, I can have that delicious tabouli salad with a more healthy twist! It’s a refreshing and filling salad for lunch or a side dish or just for snacking in the afternoon. I will also add crumbled feta cheese to mine for a little extra zip. You can use goat cheese if you want too, anything you like really. Just don’t go crazy and kill all the good with too much cheese. Moderation! This recipe is also one time where you should have the fresh parsley rather than dried.

INGREDIENTS:

½ cup uncooked quinoa

2 cups water

¼ cup fresh parsley, without stems

2/3 cup green onions (scallions), cut into ¼” pieces

1½ cups peeled cucumbers, cut into ¼” pieces

1½ cups chopped tomatoes, cut into ¼” pieces

1 garlic clove, minced (no garlic powder on this)

½ teaspoon salt

3 tablespoons fresh lemon juice

2 tablespoons extra-virgin olive oil

¾ teaspoon dried mint (optional)

½ cup crumbled light or fat-free feta cheese (optional)

DIRECTIONS:

1. Put quinoa in a fine strainer and rinse under running water until water runs clear. Drain well. Bring quinoa and water to a boil in a saucepan. Cover pan, reduce heat and simmer for 20 minutes until water is absorbed. Quinoa will be fluffy. Chill in the refrigerator or rinse cooked quinoa in a fine-meshed strainer under COLD running water. Drain well.

2. Toss remaining ingredients with quinoa and serve!

Makes 5 cups (1 cup per serving)

Collard Greens Gone Wild

Ok, I know, how can collard greens go wild? And I’m not talking fresh collard greens either. Frozen. Yes frozen. I never had collard greens growing up and of course just figured I didn’t like them. My husband suggested I try them so one day at the supermarket I went “wild” and bought a bag of frozen greens. Also since I had no idea how to serve them the Italian in me took over. I prepared them according to the package but when I served them I added butter and a parmesan/garlic seasoning. They came out really good. I was hooked. Then recently I tried them from a menu at a restaurant specializing in “southern/cowboy” type barbecue. I HATED them! They had no flavor, the color was so washed out they did not look very appetizing. Definitely not enough to even eat! Well I tried them. Yuck! I tried adding butter, salt, hot sauce…Still yuck! I was so disappointed! I knew I should have gotten the fried green tomatoes that night! So last night I kicked them up a notch so to say. They came out really good! The only thing is the bag of frozen greens is big that I now have lots left over. I will be using them tonight as my side for the Veal Scaloppini recipe I posted yesterday.  They actually look like escarole and beans a little bit. I originally served it with a Lemon Lime Marinated Chicken recipe from a great food blog called Dana’s Food For Thought. Check it out! (Thanks Dana!)

INGREDIENTS:

1 16-19 ounce bag frozen chopped collard greens

1 tablespoon olive oil

2 cloves garlic chopped

3 cloves garlic thinly sliced

2 teaspoons red pepper flakes

1 teaspoon basil

1 teaspoon oregano

2 cups chicken broth

1 -15 ounce can canellini beans, drained and rinsed

parmesan cheese

DIRECTIONS:

1. In a dutch oven or large pot sauté olive oil and chopped garlic. Saute till garlic is lightly browned. Add the basil and oregano and stir for a minute or so.

2. Add the frozen collard greens and chicken broth. Bring to a boil. Lower heat and add the beans, red pepper flakes and sliced garlic. Cover and simmer for 30 minutes.

3. Serve greens with parmesan cheese if you like.

Back of the Fridge Chicken Soup

Ever have one of those days when you just want to clean everything out of your fridge but you can’t throw it away because it’s still ok to eat? I did that last week. I had a bunch of little containers with leftover veggies, leftover rotisserie chicken from the supermarket and a freezer full of turkey stock I made from the my Thanksgiving in July dinner. You can use whatever you have left in your fridge or freezer and it will be delicious! I had some frozen mushrooms also that I threw in. It was very tasty! We actually had it two nights in a row.

INGREDIENTS:

4 cups chicken or turkey broth or stock

1 8oz. package Tofu Shirataki Noodles, prepared according to package

4 cups mixed veggies of your choice (I used a mix of frozen chopped spinach, broccoli rabe w/chicken sausage, mushrooms, peas, green beans, onion and garlic), chopped into bite sized pieces

1-2 cups chopped leftover chicken, whatever you have is good

1 15-16oz. can cannellini beans drained and rinsed.

½ cup chopped parsley

2-3 tablespoons olive oil

DIRECTIONS:

1. Saute the chopped onion and garlic in the olive oil. When soft pour in broth and rest of the ingredients except for the beans, parsley and noodles.

2. Bring to a boil and then lower heat and simmer for about 15-20 minutes until everything is heated through.

3. Add the beans and noodles and continue to cook for another 5 minutes or so until the beans are heated through. Add the parsley and serve.

4. Serve with parmesan cheese if you like!

Makes 4-6 servings.

Escarole and Beans

Such a delicious hearty peasant dish. Love it on a cold fall day or anytime for that matter. It’s a cross between a soup and a stew. You can even add some cooked ditalini macaroni to this if you want to stretch it. Any small pasta will do. If I wasn’t so lazy I’d run out to the store right now and buy some escarole and make this tonight. Maybe tomorrow night. This is such an easy dish to make and so good for you as well. Escarole is overlooked at times, people are afraid of it. It is actually part of the endive family but is less bitter. With the right spices and sauce it is just heavenly. Mangia!

INGREDIENTS:

2 cloves garlic, minced

1 small onion, chopped

2 tablespoons olive oil

1 head escarole, washed very well and cut into pieces

1 carrot, sliced

1 cup chicken broth

1 15-16oz. can cannellini beans

grated Parmesan cheese

DIRECTIONS:

1. Saute the garlic and onion in the olive oil in a saucepan until translucent. Add the escarole, carrot and broth, bring to a boil. Once it boils simmer for 20 minutes.

2. Add the beans but do not stir them in. Cook for another 5 minutes. Stir gently to mix, then serve with grated cheese and if you like, a nice hot loaf of crusty Italian bread.

Serves 4

Delicious Creole Gumbo

On May 4, 2009 the world became a lot less funny. Comedic genius and actor Dom DeLuise passed away at the age of 75. I don’t know of anyone who can’t name at least one favorite Dom  DeLuise movie. One of my faves is “Fatso”. The food in this movie was incredible and you got hungry just watching it. Especially the scene with the huge pot of sauce and meatballs. He dunks a little Italian bread into to taste it and it’s all down hill from there. Funny. He was one of my favorite actors and you always smiled when you watched him. Smiled or laughed hysterically.

Dom was not a skinny man by any means but over the years he realized he had to do something. I bought his first cookbook “Eat This…It’ll Make You Feel Better!” back in 1988. It was full of funny and wonderful stories of his family and friends. It was and still is an awesome cookbook. When I got married my father wouldn’t let me leave the house with the copy I had so I had to go and buy another one to take with me! The book is full of his mother’s Italian home cooking as well as recipes from his family and friends. It’s actually my “go to” Italian cookbook.  As the years went on and Dom got larger and larger he decided to start eating better and came out with a second book in 1997. Another hit. This one is called “Eat This Too!”. It’s a low-fat cookbook of all his favorites along with more pics and stories of his family and friends. I will never part with either cookbook. All of the recipes are delicious.

Today’s recipe is from “Eat This Too!” Gumbo can be very fattening but his version is loaded with vegetables and a seafood. Serve it over brown rice instead of the usual white rice.  Don’t be afraid of the long list of ingredients either. It’s not too scary, really! It will take longer to cut up and prep all of the veggies (where’s that private sous chef when you need one?) than to cook so be brave! You won’t be disappointed!

INGREDIENTS:

2 pounds shrimp/scallops, lobster, or other seafood, shelled, cleaned

3 tablespoons olive oil

1 onion, chopped

1 carrot, sliced

4 cloves garlic, minced

1 28-oz can tomatoes

1 6-oz can tomato paste

1 red pepper and 1 green pepper, coarsely chopped

½ teaspoon cayenne pepper

1 teaspoon parsley

1 teaspoon paprika

10 mushrooms, sliced

2 bay leaves

1 teaspoon oregano

1 teaspoon thyme

½ teaspoon Tabasco sauce

12 fresh okra, sliced

2 zucchini, sliced

1 stalk celery, chopped

3 tablespoons flour mixed with ½ cup cold water

DIRECTIONS:

1. In a large pot sauté the onion and garlic in the olive oil, until golden brown. Add the remaining ingredients except the seafood.

2. Cook over medium-low heat until flavors intermingle, about 30 minutes. Add the shrimp/scallops or other seafood. Cook just a few minutes until seafood is just done. Serve while still tender.

Serves 8-12
