Pecan Crusted Orange Roughy

I am always looking for ways to make fish differently. The thing is that when I find a good recipe I tend to make it over and over and over…My husband loves when I use panko bread crumbs so I decided to use that and kick it up a notch. Orange roughy is a really tasty, white flakey fish. This recipe can used with any white filet, like flounder, tilapia, snapper etc. Orange Roughy was on sale at my supermarket this week so I bought it. At a restaurant the other night I had almond crusted brook trout. It was delicious. So I decided to used crushed pecans with my orange roughy. It was really the first time I tried making it myself. It came out incredible! I could have eaten another filet easily. I used soy flour in this recipe also as it’s lower in carbs but feel free to use regular or whole wheat flour.

INGREDIENTS:

14 ounces orange roughy (2 filets)

¼ cup soy flour

¼ cup fat-free half-and-half (or any milk you choose)

1 egg

½ cup chopped pecans

½ cup seasoned panko bread crumbs

salt & pepper

2 tablespoons olive oil

DIRECTIONS:

1. Heat a large frying pan on medium heat.

2. Combine the pecans and bread crumbs on one plate. Combine the milk and egg in another bowl. Place flour on a plate.

3. Season the fish with salt and pepper and dredge in the soy flour. Then dip the fish into the egg/milk mixture and then bread crumbs/pecans.

4. Add oil to hot pan. Add fish to hot oil and cook 3-5 minutes on each side until fish flakes easily.  Coating should be golden brown.

Escarole, Spicy Sausage & Cannellini Bean Stew

I’ve been trying to come up with a recipe today and my mind just keeps getting sidetracked. It’s Thursday, I have an hour left before I go to “Happy Hour” with the neighborhood ladies and I am still sitting here wondering what to use in today’s blog. First I thought about doing a “happy hour” recipe, then changed my mind. I am clueless today. Good thing I don’t have to drive anywhere! We have it at our homes, we take turns once a month. So I just have to walk a few houses away.  But I still want to make sure this is done BEFORE I go meet the ladies. So I was just looking everywhere for anything. It’s been one of those days today. Not much sun out and under 80 degrees for a change. It is fall after all! Then I came across an email I got from Fine Cooking. The recipe looked pretty simple and it’s pretty quick to make too. That is always a plus. If I had escarole in the house I’d make this tonight. But I don’t so I will make it next week. Hopefully I will get another cool “fall” day in Florida!

The recipe calls for regular hot Italian sausage. I have not used regular sausage in my cooking at home in a very long time. I have used pre-cooked or uncooked chicken sausages. They come in all kinds of flavors these days and are really tasty. They have Italian style also and spicy versions as well. So that’s what I will use. Whenever they are on sale or I have coupons I stock up. They freeze extremely well. Always good for a quick snack too if you get company. Just nuke em and slice em up. Stick a few toothpicks in and serve with mustard or whatever you have for dipping. Voila! If you don’t like spicy, use regular. No worries! I will also up the amount of garlic, hey, I’m Italian, I need my garlic! For now the photo is the one I got with the recipe, but as soon as I make this myself I will swap it for my own. Seems like I take pictures of every meal these days, just in case! If anybody makes it let me know!

INGREDIENTS:

1 tablespoon extra-virgin olive oil

1 medium onion, chopped

¾ pound of spicy/hot uncooked Italian chicken sausages, casings removed

4 large cloves garlic, minced

2 (15 ounce) cans cannellini beans, drained and rinsed

1 small head escarole, chopped into 1-2″ pieces, washed and lightly dried (a salad spinner is great for this)

1 cup low-sodium chicken broth/stock

1½ teaspoons red-wine vinegar; more to taste if needed

¼ cup freshly grated parmesan cheese (more if you want)

Kosher salt

DIRECTIONS:

1. Heat the oil in a heavy 5-6 quart Dutch oven or large pot over medium heat. Add the onion and cook, stirring occasionally, until tender, 5-6 minutes.

2. Add the sausage, raise the heat to medium high and cook, stirring and breaking up the sausage with a wooden spoon or spatula until lightly browned and broken into small (1″) pieces, 5-6 minutes.

3. Add the garlic and cook for 1 minute, stir in the beans. Add the escarole to the pot in batches; using tongs, toss with the sausage mixture to wilt the escarole and make room for more.

4. When all the escarole is in, add the chicken broth, cover the pot and cook until the beans are heated through and the escarole is tender, about 8 minutes. Season to taste with the vinegar and salt. Transfer to bowls and sprinkle each portion with the parmesan cheese.

Serves 3-4

Red Quinoa with Feta & Sundried Tomatoes

Here it is again everyone! QUINOA!!! Woo Hoo!! While in Whole Foods last weekend I wanted to get some more quinoa. Looking in the bulk aisle for it I came across the regular white/beige quinoa. And sitting right next to it was this beautiful red quinoa! Didn’t even know it existed. Then again I didn’t know quinoa existed until a few months ago. I checked the nutritional information and it had almost double the fiber of the regular kind! Sold! I bought a half pound of the stuff,  just in case we didn’t like it. I should have bought more! It is so much tastier than the regular. It had a little crunch to it and a nutty taste as well. I then searched online for a different recipe than I made last time.  I found a great one on the Cooking Books blog. She had gotten it from a cookbook called The Eat-Clean Diet Cookbook by Tosca Reno and adapted it to her taste. I again adapted it to my taste.  It called for cilantro and I left it out (My husband isn’t a fan unless it’s in salsa or guacamole) and vegetable broth. I had chicken broth and used that. The recipe called for 8 sun-dried tomatoes, cut up. I found it needed more. So next time I will add more. I think about ¼ cup will do it. I liked how much feta cheese she said to put in, “as much as you’d like”. Ok, sounds good to me! Sounds good to my husband! I think it was about ½ cup in total, could be more though. I didn’t measure. But one thing I should have done was cut the recipe in half. It made a lot of quinoa for two people. We do have leftovers!

INGREDIENTS:

1 tablespoon olive oil

¼ cup sun-dried tomatoes, chopped

2 minced shallots (you can use a small onion or even a few green onions if you don’t have shallots)

1 large clove garlic, minced

2 cups vegetable broth (or any broth you have), or water

1 cup dried red quinoa

1 teaspoon cayenne pepper (you can adjust to your taste)

1 teaspoon salt

fresh ground black pepper

½ cup (or so) of crumbled low-fat feta cheese (adjust to your taste)

DIRECTIONS:

1. Heat the oil in a large saucepan and add the tomatoes, shallots and garlic. Saute for 3-5 minutes until the shallots are soft.

2. Add the broth/stock and bring to a boil. Add the red quinoa and cayenne pepper. Stir and bring back to a boil. Reduce the heat, cover, and simmer for 30 minutes. Or until all the liquid is fully absorbed. (It took longer than 30 minutes on my stove, so keep an eye on it after 30 minutes)

3. Stir in salt and pepper and feta cheese. Serve hot or cold. Make sure you mix in the feta good so it melts a bit! Yum…

Makes 4-6 servings as a side dish.

Garlic Roasted Garbanzo Beans

First of all I would like to thank CC Recipe for this incredibly delicious snack! She had three different types of roasted garbanzos and I attempted the garlic ones today. OMG! I could sit there and eat the entire batch on my own, no problem! Like she said they reminded me of corn nuts (yes they still sell those) and I had a really bad experience with corn nuts before I moved to Florida. Lost half of a molar! While at the Pindar Harvest Fest on Long Island! (My cousin Linda will vouch that I was less than calm about the incident!) So no more corn nuts. I do think I could have roasted these another 5 minutes but they still came out incredible. I changed the recipe slightly by adding more garlic powder, because I am obsessed love garlic! I also added some garlic salt when I took them out of the oven. I am also salt obsessed. I admit it, I am a Salt Monster. Anyway, they are so good. I am making a double batch next time and they are so good for you too. Oh one other thing I changed was I used soy flour instead of regular flour (my husband is carb obsessed). More fiber this way too so it’s all good. I have a few more recipes from CC Recipe that I am going to try. Awesome stuff!

INGREDIENTS:

1 (15 ounce) can garbanzo beans

salt and pepper

¼ cup soy flour (or regular)

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

DIRECTIONS:

1. Preheat oven to 400ºF.

2. Drain the garbanzo beans and gently pat dry. Let sit on paper towels for 20 minutes or until they are mostly dry. Season lightly with salt and pepper.

3. In a medium bowl whisk together the flour, ½ teaspoon salt, ¼ teaspoon black pepper, and garlic powder. Add garbanzo beans and toss lightly to coat. Shake off any excess flour.

4. Lay garbanzo beans in a single layer on a baking sheet. Drizzle with extra virgin olive oil and bake 25-35 minutes. Check on them and shake the baking sheet every 10 minutes or so. I stirred them up each time. When they are done they will be golden brown and crunchy. (Not break your teeth crunchy though! ) Just keep an eye on them the last 10 minutes or so that they don’t burn.

Greek Green Beans

Ok as promised here is the recipe for the green beans I made with the orange roughy yesterday. I used frozen green beans. I actually use frozen veggies quite a bit. This way I always have something in the freezer to go to when I’m out of fresh stuff. I usually have those ‘steamer’ bags of veggies but this time I had bought one of the larger bags, 16 ounces. For two of us that is too much to make at once so for this recipe I used half the bag or 2 cups. This is also a quick and easy side dish for any entrée. It is also a low-calorie side dish. While the beans were being nuked I sautéed the onions and garlic and it worked out great. So without any further ado here is the recipe.

INGREDIENTS:

2 cups frozen green beans (any kind you like)

2 tablespoons water

1 small onion, chopped small

1 clove garlic, minced

2 tablespoons olive oil

¼ cup crumbled reduced fat feta cheese

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes

2 tablespoons butter substitute (you can use real butter if you want)

DIRECTIONS:

1. Place green beans in a small microwave container with lid. Add the water. Cook on HIGH for 6 minutes.

2. Meantime in a small pan sauté the onion and garlic in the olive oil. Cook until soft and just starting to brown a little. About 6 minutes. Add the basil, oregano and pepper flakes. Stir well.

3. The beans should be done now. Drain the excess water from container. Add the butter/butter substitute and onion mixture. Mix well.

4. Microwave on HIGH for 2 minutes.

5. Stir in feta cheese and serve.

Makes 2 servings (1 cup each)

Tabouli with Quinoa

Usually I am not a big fan of mint. No mojitos for me.  And definitely none of that flourescent green mint jelly when I have lamb! That is wrong to my taste buds on so many levels. Luckily my husband is not a fan either. So many recipes have mint in them and most of the time, to me anyway, it’s too much. So when I tried Tabouli years ago I was surprised to find that there was mint in it! Imagine that! I liked it in spite of that! And now with my new favorite food, quinoa, I can have that delicious tabouli salad with a more healthy twist! It’s a refreshing and filling salad for lunch or a side dish or just for snacking in the afternoon. I will also add crumbled feta cheese to mine for a little extra zip. You can use goat cheese if you want too, anything you like really. Just don’t go crazy and kill all the good with too much cheese. Moderation! This recipe is also one time where you should have the fresh parsley rather than dried.

INGREDIENTS:

½ cup uncooked quinoa

2 cups water

¼ cup fresh parsley, without stems

2/3 cup green onions (scallions), cut into ¼” pieces

1½ cups peeled cucumbers, cut into ¼” pieces

1½ cups chopped tomatoes, cut into ¼” pieces

1 garlic clove, minced (no garlic powder on this)

½ teaspoon salt

3 tablespoons fresh lemon juice

2 tablespoons extra-virgin olive oil

¾ teaspoon dried mint (optional)

½ cup crumbled light or fat-free feta cheese (optional)

DIRECTIONS:

1. Put quinoa in a fine strainer and rinse under running water until water runs clear. Drain well. Bring quinoa and water to a boil in a saucepan. Cover pan, reduce heat and simmer for 20 minutes until water is absorbed. Quinoa will be fluffy. Chill in the refrigerator or rinse cooked quinoa in a fine-meshed strainer under COLD running water. Drain well.

2. Toss remaining ingredients with quinoa and serve!

Makes 5 cups (1 cup per serving)

Collard Greens Gone Wild

Ok, I know, how can collard greens go wild? And I’m not talking fresh collard greens either. Frozen. Yes frozen. I never had collard greens growing up and of course just figured I didn’t like them. My husband suggested I try them so one day at the supermarket I went “wild” and bought a bag of frozen greens. Also since I had no idea how to serve them the Italian in me took over. I prepared them according to the package but when I served them I added butter and a parmesan/garlic seasoning. They came out really good. I was hooked. Then recently I tried them from a menu at a restaurant specializing in “southern/cowboy” type barbecue. I HATED them! They had no flavor, the color was so washed out they did not look very appetizing. Definitely not enough to even eat! Well I tried them. Yuck! I tried adding butter, salt, hot sauce…Still yuck! I was so disappointed! I knew I should have gotten the fried green tomatoes that night! So last night I kicked them up a notch so to say. They came out really good! The only thing is the bag of frozen greens is big that I now have lots left over. I will be using them tonight as my side for the Veal Scaloppini recipe I posted yesterday.  They actually look like escarole and beans a little bit. I originally served it with a Lemon Lime Marinated Chicken recipe from a great food blog called Dana’s Food For Thought. Check it out! (Thanks Dana!)

INGREDIENTS:

1 16-19 ounce bag frozen chopped collard greens

1 tablespoon olive oil

2 cloves garlic chopped

3 cloves garlic thinly sliced

2 teaspoons red pepper flakes

1 teaspoon basil

1 teaspoon oregano

2 cups chicken broth

1 -15 ounce can canellini beans, drained and rinsed

parmesan cheese

DIRECTIONS:

1. In a dutch oven or large pot sauté olive oil and chopped garlic. Saute till garlic is lightly browned. Add the basil and oregano and stir for a minute or so.

2. Add the frozen collard greens and chicken broth. Bring to a boil. Lower heat and add the beans, red pepper flakes and sliced garlic. Cover and simmer for 30 minutes.

3. Serve greens with parmesan cheese if you like.

Sandwich Spreads

When we make sandwiches we usually put either mayonnaise or mustard or both on them. I’m the last person to put down mayonnaise but why not try something different. I actually use guacamole sometimes if I have leftovers in the fridge. Have to use it before it turns brown so I use it on sandwiches, hamburgers and even hot dogs! So good! I have a few other substitutes that we can all use on our sandwiches that will definitely give them more pizzazz! Don’t be scared, try it, you may like it. And I of course will use the light versions of most of these items if they are available. These spreads will last up to a week in the fridge!

BLUE CHEESE & WALNUT BUTTER

This is great on roast chicken, beef or apple sandwiches.

Beat ½ cup soft butter and ½ cup crumbled blue cheese in a bowl. Stir in ¼ cup chopped toasted walnuts. Makes 1 cup

CREAMY PEPPERY GREENS

This is great on roast beef or corned beef sandwiches.

Stir 1/3 cup minced arugula, 1/3 cup minced radicchio, 1 tablespoon lemon juice, salt and pepper  into 1 cup mayonnaise. Makes 1 2/3 cup.

FIG JAM

This is great for turkey or grilled cheese sandwiches.

Plump 1 cup chopped dried figs in 3 cups hot water for 25 minutes. Drain the figs, reserving some liquid. Puree in a food processor. Add the saved liquid until the mixture is spreadable. Like jam! Stir in ¼ teaspoon orange zest. Makes 2/3 cup.

ZESTY WHITE BEAN

This spread is delicious on ham, veggie or tuna steak sandwiches.

Blend one 15-ounce can rinsed cannellini beans in a food processor with 1 teaspoon lemon zest, 1 teaspoon fresh thyme, salt, pepper and 2 tablespoons olive oil. Makes 1 cup.

Pesto #5: Arugula Pesto

Just like basil pesto and spinach pesto, arugula pesto is a vibrant green color. Full of flavor with a little bit of a bite to it.  This is another perfect sauce for pasta. Make sure that you wash the arugula extremely well though. Change the water at least two times because it takes a while to remove all the soil and grit. Nobody likes a gritty pesto!

INGREDIENTS:

2 cups (packed) fresh arugula, cleaned extremely well!

1 garlic clove

½ cup olive oil

½ cup freshly grated Parmesan cheese

½ teaspoon salt, more to taste

½ teaspoon freshly ground black pepper, more to taste


DIRECTIONS:

1. In a food processor blend the arugula and garlic until finely chopped. With the machine running, gradually add the oil, processing until well blended.

2. Transfer the pesto to a large bowl and stir in the Parmesan cheese, salt and pepper. Season with more salt and pepper if needed. Cover and refrigerate.

Makes about 1 cup and can be made 2 days ahead.

Pesto #4: Mushroom Pesto

As we’ve seen this week, pesto comes in all colors. Green is the most popular color and red is a newcomer with its own distinct flavor. Mushroom pesto adds another. I don’t want to say brown but it’s the color of mushrooms.  This recipe uses both dried and fresh mushrooms. They both bring their own unique flavor and texture to the sauce. Dried porcini mushrooms are usually easy to find all year-round. They aren’t usually too cheap but if you can find them on sale they will keep for a while in your pantry. I even keep small cans of porcini and shiitake mushrooms in my pantry for any occasion as well. Try using them if you can’t find dried! This sauce is great on pasta but also just as good on toasted crostini (toasted bread slices)

INGREDIENTS:

1 ounce dried porcini mushrooms

8 ounces white button mushrooms, quartered

1½ cups fresh flat-leaf parsley leaves

½ cup toasted walnuts

2 garlic cloves

½ cup extra-virgin olive oil

½ cup freshly grated Parmesan cheese

½ teaspoon salt, more to taste

½ teaspoon freshly ground black pepper, more to taste


DIRECTIONS:

1. Bring a small saucepan of water to a boil. Remove the saucepan from the heat and add the porcini mushrooms, press to submerge. Let stand until the mushrooms are tender, about 15 minutes. Drain the soaking liquid from the mushrooms and discard.

2. In a bowl of the food processor add the porcini mushrooms, button mushrooms, parsley, toasted walnuts, and garlic. With the machine still running, gradually add the oil, blending just until the mushrooms are finely chopped. Transfer to a medium bowl. Stir in the Parmesan cheese, salt and pepper. Add more salt and pepper if needed. Cover and refrigerate.

Makes about 1 cup and can be made 2 days ahead.
